Fruity Summer Mango Salad

Ingredients:

  • 3 Mangoes

  • 1 Avocado

  • 15 Cherry Tomatoes

  • 10-12 Large Romaine Lettuce Leaves

  • 1 Apple

  • 1 Cucumber

  • 1 Tablespoon Extra Virgin Olive Oil

  • 1 Teaspoon Raw Cider Vinegar

  • Salt To Taste

  • 12 to 14 Cashew Nuts Roasted Lightly in Ghee

 

Method:

  1. Wash, peel, and cut mangoes, avocado, apple, and cucumber into cubes.

  2. Tear the salad leaves.

  3. In a small bowl mix olive oil, vinegar, salt and blend well. Set aside.

  4. Mix cut fruit and vegetables, including tomatoes.

  5. Add salad dressing to chopped salad just before serving.

  6. Top with roasted cashew nuts.
