Fruity Summer Mango Salad

15 Cherry Tomatoes
10-12 Large Romaine Lettuce Leaves
1 Tablespoon Extra Virgin Olive Oil
1 Teaspoon Raw Cider Vinegar
Salt To Taste
12 to 14 Cashew Nuts Roasted Lightly in Ghee
Wash, peel, and cut mangoes, avocado, apple, and cucumber into cubes.
Tear the salad leaves.
In a small bowl mix olive oil, vinegar, salt and blend well. Set aside.
Mix cut fruit and vegetables, including tomatoes.
Add salad dressing to chopped salad just before serving.
Top with roasted cashew nuts.
